Happy New Year! 🎉 We’ve made it through 366 days of chaos, and now, here we are—ready to tackle a fresh set of 365 days that will surely surprise, confuse, and occasionally overwhelm us in completely new and exciting ways. Before you make those New Year resolutions that you’ll forget about by February, let’s take a moment to laugh at the rollercoaster we just survived… and the one we’re about to board.
I took a break from writing during Christmas due to a lack of time to sit down at my computer. It feels like it’s been ages since I last wrote, but it’s only been five days. Last Monday and Tuesday, I baked cookies and I’m still in the process of making them. I prepared all the cookie dough in advance, and I still have sugar cookies and biscochitos left to bake. Last night, Alex asked if I could whip up more gluten-free chocolate chip cookies. I believe I might need more gluten-free flour, but I won’t confirm that until I check the pantry.
On Tuesday and Wednesday morning, I baked cookies and rolls until Tommy took over the oven to prepare the roast. Kel’s dad visited for a few hours on Christmas but couldn’t stay for dinner as he was feeling under the weather. Unfortunately, Chris was also unable to attend Christmas due to work commitments. We opened our presents early, and it turned out to be a lovely Christmas where everyone received what they had hoped for. Afterward, we enjoyed dinner and took some time to relax.
On Thursday, Tommy had to work, so Kel and I drove him in since we had plans for tea at 6:30 PM that evening. I spent the day studying and baking cookies, while Alexis took over the gingerbread cookie task and did a wonderful job. That night, we went to St. James Tea Room, picking up Chris on the way, who joined us for tea. Chris stayed with us until Saturday evening.
On Sunday, Tommy and I watched football together. The Bucs won, making the playoffs look promising. Afterward, we exercised and took the car to the car wash, and then we stopped by Walmart before heading home.
Today, I worked on some coding and then organized the pill boxes. I had planned to do laundry, but I’ve decided to tackle that tomorrow instead. Tonight, I’m preparing butter chicken, which I plan to start soon. Alex has been requesting butter chicken, and Alexis also asked for it before she returns to her dorm.
